Ceviche is one of the most refreshing dishes during the summer. You can purchase steamed shrimp and cut it up (which we sometimes do) or you can prepare it the OG way by letting the shrimp (or fish) cook in lime or lemon juice. We toss in a few kitchen staples to the citrus juice like tomatoes, onions, and cilantro then let it soak for a few hours or overnight. This allows all the flavors to meld together. Its light, tangy taste makes it perfect for summer. We top it with avocado and pair it with chips making it an easy and healthy meal with minimal dishes!
Ingredients
1 lb steamed shrimp
5 limes
1 lemon
1 bunch of cilantro
1 tomato
1 small onion
1 jalapeño
Spices are optional (paprika, cumin)
2 avocados
tortilla chips
The Shrimp
Cut the shrimp into 1/2 inch pieces and transfer to a bowl. Set aside.
In a small bowl, whisk together the lemon and lime juice to combine. Pour 1/2 cup of the citrus juice over the shrimp and toss to combine. Allow the shrimp to marinade in the juice.
The Other Stuff…
Finely chop the tomato, onion, jalapeño and cilantro. Add these ingredients to the citrus and shrimp.
Season the ceviche with salt & pepper, to taste.
Serve with fresh avocado and tortilla chips.
