I love this recipe for so many reasons. Who doesn’t love a veg or a meat with a slight char on it? Kebabs are my go to once the weather starts to warm up. The marinade is delicious on it’s own, but add on the veggies and it continues to season the meat as it cooks.
Tip: Cut up all of the chicken and throw it in a bag to marinate over night. As the marinade penetrates the meat you are left with flavorful tender chicken. Next, cut up all the veggies and throw those in a bag. You can store both the meat and the veggies in the fridge and whip both out when you are ready to prepare the kebabs.
The marinade
1⁄2 cup greek yogurt
Fresh lemon juice (2 large lemons)
1/4 cup olive oil
4 cloves garlic, minced
2 teaspoons ground cumin
1 tablespoon smoked paprika
Few sprigs of fresh oregano
*If you have other herbs, don’t hesitate throw them in. Cilantro and parsley would be great additions.
The skewers
Chicken breast or chicken thighs cut into 2-inch pieces
2-3 Zucchini (mandolin these into ribbons
2 Red onions (cut into 1.5 inch pieces)
1-2 Bell Peppers (cut into pieces)
Throw them on the BBQ until the chicken is cooked through.
There are so many ways to enjoy these… salad, pita wrap, faro, but my favorite way is to toss them over a bed of Mujadara with a little bit of Tzatziki.
